Abstract
A large no of variety of vegetables and fruits which has alkaline property and acidic
newlineproperty, their extract show PH value more than 7 and less than 7 like weak base and
newlineweak acid. The extract or juices of vegetables and fruits can be used as a hydrolytic
newlineagent like raw papaya extract, cabbage extract and peel extract of Banana. Similarly
newlinecitrus fruits like lemon, orange, pineapple extract has acidic in nature so, their extract
newlineor juice are used in acidic hydrolysis.
newlineHere, we hydrolyze the different aromatic and aliphatic esters and their derivatives,
newlinesome ester molecules has functional group like Cl, -Br, -NO2 etc on the aromatic
newlinering which has electron withdrawing nature and enhances the reaction rate of
newlinehydrolysis. Where CH3, -CH2CH3 etc groups decreases the rate of reaction.
newlineBecause these show inductive effect. In the side chain of methyl, ethyl, propyl and
newlinephenyl, long (bulkier) chain gives easy ester hydrolysis compare to small group.
newlineHence ethyl ester gives fast hydrolysis compare to methyl ester.
newlineVarious Investigation have shown the hydrolytic properties of alkaline natural fruits
newlineand vegetables on different substances. Some are discussed here -
newlineThe hydrolytic properties of the natural latex of Carica papaya has been observed in
newlinewhich the enzymatic properties of this latex were studied in experiments on the
newlinehydrolysis of Gelatin. Generally, the degree of hydrolyses with gelatin was found very
newlineslow.
