Continuous Modulation of Raisin Making Process In Shade Drying

Abstract

The optimal production of raisins is of paramount importance for the raisin sector to prosper and fulfil the expectations of consumers. A thorough investigation was undertaken to augment the comprehension and administration of obstacles related to the marketing of raisins in the western Maharashtra region of India. The research was cantered on the ongoing modulation of the raisin production process through the utilization of shade-drying methodologies. More specifically, the study aimed to compare the efficacy of open shade drying and modified shade drying techniques. newlineAccording to the study, the conventional method of open shade drying lacks precise control over drying parameters, resulting in inconsistent drying outcomes and variable quality. Modified shade drying, on the other hand, employs sophisticated methods that include mobile shading structures, automated sensors, and control systems to maintain consistent environmental surveillance and achieve ideal drying conditions. The utilization of this technique results in the mitigation of extraneous disturbances, a decrease in the duration of the curing process, and an enhancement of both the productivity and quality of raisin production. newlineThe study objectives encompassed diverse facets of the process involved in the production of raisins. The study scrutinized the materials and equipment utilized in the procedure, encompassing perforated stainless-steel screen-type trays, racks, heaters, sensors, and control panels, among other components. Parameters such as moisture content, TSS (oBrix), pH, acidity, average berry dimensions, color intensity, total phenol and tannin content, reducing sugar, drying time, electricity consumption, and sensory acceptability for different drying conditions and grape varieties were also analysed. newlineBased on the findings, drying Thompson Seedless (T) and Manik Chaman (M) grapes at a temperature of 45°C was determined to be the most effective approach for producing high-quality raisins. The application of this specific drying temperatu
