Development of Garlic Powder and Garlic Incorporated Pasta

Abstract

With the changes in lifestyles, people are diverting towards minimally processed products or semi-processed products for time-saving and ease of use for the intended purpose. Due to the demand of garlic products such as peeled garlic, garlic paste, garlic oil, garlic grits, and garlic powder increased massively on both an industrial and home scale. Nowadays, people are diverting towards functional instant foods prepared from natural sources with high therapeutic values. Functional foods prepared by incorporating natural sources such as garlic, onion, carrot, and green vegetables are a novel approach to preparing instant or semi-processed food with a vehicle to deliver higher therapeutic values. Garlic powder is one of the products that have uniform mixing properties with other dried food products to provide a better taste and texture. Garlic powder-incorporated pasta is a semi-processed product that may be uniquely positioned in functional foods.
