Abstract
Propolis is one of the significant api-products known for its indispensable nutritional and therapeutic values. It is a highly complex material recorded to contain hundreds of compounds contributing to its ineffable bio-functionalities. Despite the numerous studies conducted on the pharmaceutical applications and chemical composition of propolis, however the challenges are still restricting the utilization of propolis in commercial drugs and food formulations. These challenges arise due to tremendous in consistency in raw material related to geographic origin, collection season, bioactive compounds, gross composition, and botanical source authentication, which eventually create intricacies in the entire process of developing standardized formulations for commercial use.

newlineThe present study was, therefore, an attempt to characterize the propolis collected from Indian plant sources and develop an extruded ready-to-eat (RTE) snack enriched with propolis to assess its utility as a functional component. This investigation has been divided into five chapters.
